🍌 🍓 Fruit Ice Lollies

Ingredients:

  • 200g yoghurt
  • 1 banana
  • 2 tbsp chia seeds (optional)
  • 10 tbsp milk, for soaking the chia seeds
  • 150g fruit of choice (mango, pineapple and berries all work well)

Instructions:

  1. If using the chia seeds, soak 2 tbsp chia seeds in 10 tbsp milk, a 1:5 ratio, for 1 hour before you start. While they soak, chop 150g fruit of choice into small pieces.
  2. Mash 200g yoghurt, 1 banana and the soaked chia seeds together in a bowl until smooth.
  3. Crush a few pieces of the chopped fruit against the side of the bowl to bleed some colour and background flavour into the mix, then stir it all through. Can add a bit of milk if not runny enough for the mould.
  4. Spoon into a silicone mould.
  5. Stand a teaspoon in each one to act as a handle. No plastic.
  6. Freeze overnight.

Note: to store them in the freezer, run hot water over the outside of the mould, then turn the lollies out of the mould and stack them between sheets of non-stick baking paper so they do not stick together.
