🍜 Garlic Sesame Rice Noodles with Steamed Vegetables

Ingredients:

  • 225g rice noodles
  • 2 tbsp sesame oil
  • 3 cloves garlic, minced
  • ¼ tsp ground ginger
  • ¼ cup soy sauce
  • 1 tbsp sugar (or any other sweetener)
  • 1 tbsp water
  • 4 cups mixed vegetables (broccoli, carrots, courgette, snap peas)
  • ¼ cup chopped spring onions

Instructions:

  1. Put 225g rice noodles on to cook according to the packet instructions. While they cook, mince 3 cloves garlic, chop ¼ cup spring onions and cut 4 cups mixed vegetables into pieces. Drain the noodles and set aside.
  2. In a small saucepan, heat 2 tbsp sesame oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. At the same time, steam the mixed vegetables in a steamer basket, or in a microwave-safe dish with a splash of water, until crisp-tender (about 5-7 minutes).
  4. Add ¼ cup soy sauce, 1 tbsp sugar, 1 tbsp water and ¼ tsp ground ginger to the saucepan, and cook the sauce for 2-3 minutes, stirring occasionally, while the vegetables steam.
  5. Combine the noodles, steamed vegetables and sauce in a large bowl, and toss well to coat evenly.
  6. Sprinkle the chopped spring onions over the dish and serve immediately.

Note: Customise with your favourite vegetables, or add tofu, chicken or shrimp.
