⏱️ Prep: none | ⏲️ Cook: 15m
Ingredients:
- 225g rice noodles
- 2 tbsp sesame oil
- 3 cloves garlic, minced
- ¼ tsp ground ginger
- ¼ cup soy sauce
- 1 tbsp sugar (or any other sweetener)
- 1 tbsp water
- 4 cups mixed vegetables (broccoli, carrots, courgette, snap peas)

- In a small saucepan, heat 2 tbsp sesame oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- At the same time, steam the mixed vegetables in a steamer basket, or in a microwave-safe dish with a splash of water, until crisp-tender (about 5-7 minutes).
- Add ¼ cup soy sauce, 1 tbsp sugar, 1 tbsp water and ¼ tsp ground ginger to the saucepan, and cook the sauce for 2-3 minutes, stirring occasionally, while the vegetables steam.
- Combine the noodles, steamed vegetables and sauce in a large bowl, and toss well to coat evenly.
- Sprinkle the chopped spring onions over the dish and serve immediately.
