🥜 A Healthier, Cheaper, Nut Bar

Ingredients:

  • 1½ cups mixed nuts (almonds, walnuts, cashews, pecans, macadamia)
  • ½ to 1 cup seeds (chia, flax, pumpkin, sunflower)
  • ¼ to ½ cup raisins or dried fruit, finely chopped
  • 1 heaped tbsp honey
  • 2 heaped tbsp nut butter (almond or peanut)
  • 3 tsp vanilla extract
  • ¼ tsp sea salt
  • ½ tsp cinnamon (optional)

Instructions:

  1. Preheat the oven to 160°C/325°F (140°C/285°F fan) and put 1 heaped tbsp honey, 2 heaped tbsp nut butter and a splash of water in a large saucepan over low heat.
  2. While the honey mixture melts, line a baking tin with parchment paper (or oiled tin foil) and finely chop ¼ to ½ cup raisins or dried fruit. Stir the pan now and then until melted and well combined, about 2 minutes, then take it off the heat and stir in 3 tsp vanilla extract and ¼ tsp sea salt.
  3. Add 1½ cups mixed nuts, ½ to 1 cup seeds and the chopped dried fruit to the honey mixture and stir well until everything is evenly coated.
  4. Press the mixture firmly into the tin, packed tightly and evenly, and bake for 15-20 minutes until lightly golden.
  5. [IMPORTANT] Let it cool completely in the tin for 2 hours before cutting into bars. Store in an airtight container.
