🐷 Pork Ribs

Ingredients:
For the ribs:
- 2 racks of pork ribs
- 2 tbsp olive oil
- Smoked sea salt and black pepper to taste
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp dried thyme
- 1 tsp each: dried rosemary, oregano, sage
For the mayonnaise sauce:
- 1 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp honey
- 1 tbsp apple cider vinegar
- Salt and black pepper to taste
Instructions:
Prepare the ribs:
- Preheat the oven to 135°C. While it heats, remove the membrane from the 2 racks of ribs, if present.
- Rub the racks with 2 tbsp olive oil, then season with smoked sea salt, pepper, 1 tsp garlic powder, 1 tsp onion powder, 2 tsp dried thyme and 1 tsp each of rosemary, oregano and sage.
- Wrap each rack individually in foil and bake for 2.5-3 hours.
Make the mayonnaise sauce:
- Once the ribs are in the oven, whisk together 1 cup mayonnaise, 2 tbsp Dijon mustard, 1 tbsp honey, 1 tbsp apple cider vinegar, and salt and pepper to taste.
- Refrigerate for the rest of the cook.
Finish the ribs:
- Grill or broil the ribs for a few minutes to caramelise.
- Brush with the sauce during the last few minutes.
- Slice and serve with the extra sauce.
